Cleveland... Here We Come!

If you have heard rumors of a new location opening soon in Cleveland we can confirm that YES, we will be opening a new Casa-Rolls location sometime in mid July 2009!! We are SO EXCITED about our new location at the corner of Paul Huff Parkway & Keith Street (next to Don Ledford's car dealership). We are in the process of renovating an old Central Park building and as you can see from the picture & designs, it is going to be SO CUTE! Painting is well under way, siding will go on next week, and we are deep cleaning to bring the building up to our standards! We will let you know when the store opens, and we look forward to serving our customers from Cleveland in their hometown.

Happy Memorial Day! It is hard to believe that we are closing school for the year, and summer is right around the corner. Casa-Rolls IS OPEN for Memorial Day, so if you find that you need a casserole for your holiday picnic, swing on by and pick one up HOT (call ahead) or COLD! As we approach the summer months, we would love to hear from you if you have ideas/requests for dishes that you would like to have on the menu. We are developing recipes this summer for heart healthy casseroles & fresh side dishes....and we have already introduced our new FRESH BAGS to start this expansion of our menu! If you have not tried a fresh bag, it is a perfect complement for a simple vegetable side to go with a casserole dinner. Portioned for 4 to 6 for $5.90, the steam bag is filled with a fresh vegetable (green beans, broccoli, asparagus, sugar snap beans) that has been prepped so that all you have to do is stick the bag in the microwave for 3 to 5 minutes, add seasoning, and serve! The next two weeks will feature fresh cut green beans...they are so good (we had them for dinner last night)!! We will rotate the choices often, and if they are selling well, we will offer more than one vegetable choice.

TOMATO BASIL PIE is back (and Veggie Pie off the menu)....just thought I would let you know as we have been receiving LOTS of requests for this!

Chattanooga is expecting rain tomorrow, but that won't stop the party at Casa-Rolls!! We have over 12 NEW items that we will be tasting, and many of them will be perfect for your Easter family get togethers! These are some of the delicious dishes that we will be "tasting":

French Green Bean Casserole with Swiss Cheese - very different from the traditional crispy onion topped Green Bean casserole we serve for the winter holidays....our Casa-Rolls crew LOVED it!

Broccoli Casserole - many of you have been requesting a broccoli casserole and I think we have developed a real winner.

Green Pea Casserole - There is nothing that says "SPRING TIME" more to me than green peas....I love this classic which has pimmento's and water chesnuts with a crispy onion topping.

Carrot Souffle - we have become famous for our SWEET POTATO SOUFFLE which is offered at Thanksgiving and Christmas, and if that is one of your favorites, then you will really like this delicious dish!! Again, the staff gave RAVE reviews for this casserole, so come and taste how amazingly good it is!!

Chicken Cannollini in Vodka Sauce - Delicious..... and customer comments this week have been great!

Grilled Veggie Half Moon Ravioli with Red Pepper Pasta and Sugar Snap Peas in Caribbean Alfredo Sauce - The name says it all....very tasty and one of our new pasta rotations at Casa-Rolls.

Creamy Chicken Enchilada's - A friend of mine in Birmingham gave me this recipe....AMAZING....and we have had so many wonderful compliments from our customers on this dish....come try it.......it is a special on the menu NEXT WEEK.

Bette's Sopa De Fideo - Bette is one of our customers and she submitted this recipe for us to try...we chose to put it on the menu it was so good!!

Chicken & Wild Rice Casserole - An old recipe of mine that I found when going through some recipe cards...and what a response we have had to this delicious dish. It is so good that one of our customers at East Brainerd this week came by twice in one day to get a second one!

Party Ham Rolls - An all time favorite of children and their parents, these great rolls are hard to eat just one!

Broadbent Ham Products - We offered these for the Christmas holiday and sold out....come taste Grandma Broadbent's Country Smoked Sausage, Country Ham, Maplewood Cinnamon Bacon (one of my favorites), Pepper Bacon (Greg's favorite) and more....they are wonderful and a cut above what you can get at the grocery!

We will also taste our Twice Baked Potatoes, my Aunt Kacky's Pecan Pie and our NEW Ham Salad! All of the items we are tasting WILL BE AVAILABLE FOR SALE in a limited amount, so come early to make sure your favorite does not run out!

Appetizers Available by Pre-Order and Easter Tasting March 28th

Have you seen our new banners? If you come by the store on Tuesday March 10th, Wednesday March 11th or Thursday March 12th, and mention seeing the banners on the road, then you will receive a 10% discount on your order or that day!

March Madness is here. With spring just around the corner and basketball tournaments on the TV we love this time of year! Casa-Rolls has LOTS of great appetizers available for pre-order for your tournament parties. Just check our menu online and call either store to order one or several dishes! Starting this Thursday March 12th, all of our appetizers will be by pre-order only. We think that our appetizers are the best, but they are a relatively small part of our sales at Casa-Rolls. In order to be the most efficient with our time, we will cut these out of our "on-demand" lineup. To order an appetizer, just call either store by Wednesday of each week for pick up Thursday - Saturday. We will make your dish from scratch and have it ready on the day of your choice. This new policy also applies to our Breakfest Casseroles, so plan ahead and let us know in plenty of time!

Saturday, March 28th we will have a menu tasting from 11 to 2 at both Casa-Rolls locations. We will feature some new side dishes that will be offered for Easter. We will also have samples of our new Pasta of the Week dishes, Mexican Casserole of the Week dishes, and some of our other standard casseroles. Please join us and bring a friend!

New Menu Items $4.00 and Under

In a constant effort to bring VALUE to your family meals, we are offering several new dishes $4 and under to our February Menu. Jana's Meat Loaf, Twice Baked Potatoes, Godiva Chocolate Cheesecake, & Creme Brulee Cheesecake will be available starting Tuesday February 10th and will be sold in individual servings. Also new to the menu will be a featured PASTA OF THE WEEK; the variety of specialty pastas will be very impressive and will be a wonderful addition to our current menu! We will start next week with a Vegetable Half Moon Red Pepper Ravioli in a delicious Alfredo Red Pepper Pesto Sauce.

Valentines Day: Do you know that Valentines Day is on a Saturday this year? Can you imagine the crowds on this day, one of the busiest in the Restaurant industry? SuperBowl & Valentine Menus

We have posted our Super Bowl Menu on the Menu page. Orders are due by THIS WEDNESDAY, January 28th, and will be available for pick up on Friday and Saturday, January 30th OR 31st. This menu is perfect for a get together for up to 6 people and will make your party "score the winning touchdown" with all your friends!! You can call the East Brainerd Store (423)510-9570 OR Hixson Store (423)710-3851 to place your order, or come by and fill out an order form. We will post the Valentine's Menu next week (filets, twice baked potatoes, lobster ravioli and more)....wouldn't you rather have a nice dinner at home and NOT have to fight the restaurant crowds?? We would LOVE to help you have a memorable Valentine's meal with very little effort!

HIXSON HOT ORDERS: We now have hot service at our Hixson location. Please note that if you would like a casserole heated at this location, you will need to let us know AS SOON AS POSSIBLE, and at least 1 1/2 hour before you would like to pick up your meal.

NEW TO MENU: Chicken San Francisco is on the Menu thru the end of February. If you have not tried this wonderful dish, you are missing out on a great meal! Six ounce chicken breasts are dipped in garlic butter, dredged in a bread crumb parmesan mixture, then rolled and sprinkled with lemon juice and paprika. This dish is a little "dressier" than a regular casserole, and perfect for a nice meal at home. We are also introducing THIS WEEK starting Tuesday, Twice Baked Potatoes which we will sell individually so that you can buy just 1... or as many as you need! They are yummy, and so good as a side to any meat dish OR alone with a salad for a vegetarian meal. Broccoli & Rice is also on the menu for this rotation. SOUPS: We are offering a different soup every week during the winter months. We sell our soups by the QT (4 cups) and they are all quite tasty!! We welcome ALL menu suggestions and if you have any requests, please let me know. I will be happy to serve your favorite as a weekly special or menu addition.

Our employees got together this weekend for our annual Christmas party, and we all agreed that this year has been the BEST!! We have a great team who enjoys working together to serve YOU and we are ready to get to work on our Christmas Holiday Menu, which is posted on our web site OR available at both stores. All orders are due by SATURDAY Dec. 20th for guaranteed availability. THE EARLIER you order THE BETTER. We have some really nice additions to the Christmas Pre-Order menu that are different from Thanksgiving...Fresh Veggies to roast, Meats to grill, Award Winning Breakfast Meats, to name a few! The Hixson Casa-Rolls location has a NEW OVEN which is being connected and tested this week. Starting next Monday (barring no complications) we will begin to offer the HOT service that so many of you in the Hixson area have requested. To use this service you will need to call the store at 423-710-3851 (at least 30 minutes in advance or earlier) give your name, place your order and let us know what time you will be there to pick it up. Dinner will be HOT and ready to eat the moment you get home!

Holiday Tasting at Casa-Rolls

Many of you have been to Casa-Rolls this past month, and received our FREE Betty Crocker give-a-way. Pictured to the right are the WONDERFUL ladies who cook and assemble our delicious casseroles, tasting the Chocolate Cake sample featured this month! (L to R: Becky Moses, Tracy Appleby, Jana Horne and Ellie Langham). For the next few months, we will be putting various "samples" in your take home bags. We hope that you will enjoy these treats!

Casa-Rolls will be at the WOMEN'S EXPO and Taste of Home Cooking Show today Tuesday, October 21st. We will be at booth #55, and would love to see you if you are there! Our Thanksgiving Pre-Order sheets will be available for the first time this season, as well as gift cards and a limited selection of casseroles for sale.

YOU ARE INVITED to come to a HOLIDAY TASTING, Saturday, November 8th from 11AM to 2 PM at BOTH locations (1414 Jenkins Road & 2903 Hixson Pike)! Fall, Football, and New Menu Items

Fall is here and with cooler tempratures, FOOTBALL dominates the weekends! Our popular Black Bean Dip, Buffalo Chicken Dip & LOTS of casseroles are flying out the Drive Thru Window each Friday and Saturday as many of you tailgate or get together to watch your favorite teams. Thank you for thinking of us during these times!

I want to also THANK each of you for bearing with us as we work though our new reduced menu schedule. As we figure out demand, there have been days that we were out of your favorite dish. We are getting better at our estimates, but let me just encourage you to CALL AHEAD if you have a particular meal in mind. We can always set aside a dish as we don't ever want to disappoint !

NEW MENU ITEM: Starting this TUESDAY September 30th, we will be adding QUICHE to our menu. We have gotten many requests for this dish and finally, after lots of testing, we have the perfect recipe!! Each week, we will feature a different quiche....and you will LOVE our version of this dish! In all of our testings, we have received raving reviews "this is the BEST one I have tasted"....the quiche is tender, and tasty (not the tough egg mixture of many store-bought quiche's) with a crispy crust which sets it off perfectly! Tuesday we will introduce our Swiss & Spinach Quiche and the other wonderful variations upcoming will be listed on our menu starting Tuesday next week. The dish will come with instructions for the perfect quiche when cooked in your oven at home.

This is the LAST WEEK for our Squash Casserole, Peach Cobbler and Tomato Basil Pie, which are summer offerings at Casa-Rolls. We will start into some new menu items for fall including our Vegetable Pie, Apple Berry Crisp. and more The new menu will be updated on the web site Monday October 4th.

TUESDAY, OCTOBER 21st,Casa-Rolls will be at the TASTE OF HOME event at the Chattanooga Convention Center. Our booth number 55 will be open from 1 TO 9 PM, and we will have coolers of casseroles for sale. We will also have our HOLIDAY PRE-ORDER MENU available for you to take home for your holiday planning. Please stop by and say hello...I would love to visit with any of our customers who will be there and would love to meet your friends who may be new to Casa-Rolls!

Upcoming Changes

August means back to school for many of us! With two in school and one starting college this year, it has been a busy few weeks! CHEESY CHICKEN SPINACH (our signature dish) is a favorite and can be an easy solution for dinner AT HOME on a tight school schedule.

Labor Day is THIS weekend.....in addition to our usual items, we want to suggest 3 delicious Casa-Rolls Dips which are perfect for get togethers with family and friends: Black Bean Dip (our favorite appetizer) , Buffalo Chicken Dip (our newest offering that will become your new favorite), and our outstanding Artichoke Spinach Dip. Pre Ordering by Thursday will guarantee availabilty for the weekend!

Despite the rise in food and oil prices,we want to continue helping you serve your family the best meals at the best prices. In order to keep our current pricing, we are retooling our menu by offering fewer items while rotating your favorites on a regular basis. With holiday sales around the corner, we expect the number of our offerings to ramp up then. Keep an eye on our menu for the latest on our current menu starting September 2, 2008.

HAPPY BIRTHDAY to Casa-Rolls!! This July celebrates our 2nd year in business. Thank you SO much for you support of our local concept! We appreciate YOUand thank you for spreading the word about Casa-Rolls! In honor of our second year, we will be launching a customer loyalty program this fall....more on this later!

I am amazed how fast this summer has passed...with only 4 weeks left until the 2009 school year, I am sure that many of you are starting the process of shifting gears to get ready for school. June and July are traditionally the slowest months in our business, but the start of school season pushes Casa-Rolls into HIGH gear as we prepare meals for very busy families!

AT LAST....we have posted our nutritionals on our web site. Just scroll down to the casseroles listed and click on the nutritional information to check it out. As you view these nutritionals, make sure that you check the serving size for each dish. Most are based on a 1 cup or 1/2 cup serving. The appetizers are based on a 1/4 cup serving. There are some items that we have not posted yet, as we are still researching ingredient values. We will not be able to do the specials yet, but will be working on those as well for future posting!

WANTED: Customers who would be willing to participate in a lunch time discussion with me about Casa-Rolls; our menu, future offerings and other ideas will be the topic of our lunch meeting! I will schedule a series of "round-table" discussions (at no cost to you) based on the number who would like to participate. Just e-mail me to sign up. Summer is Here!

Summer is here and with the summer months, our wildly popular Tomato Basil Pie is back!! Some of you have inquired about the safety of the tomatoes, and we want to assure you that our tomato pies are SAFE, as the tomatoes are heated to 140 degrees when you bake them for 40 minutes at 350 degrees. Cooked tomatoes do not fall into the government warnings for Salmonella. Raw tomatoes are the only ones affected in the recent warnings which have been in the news lately.

This pie is outstanding...I baked one last night (the first of the season for me) and we had it as a side dish to our roasted chicken! With only 4 of us in the house right now, we had left over's and I think that it is even better if there are left over's! Hanna Kate, one of my daughters, had a left over piece for breakfast this morning and I finished out the leftovers for lunch! If you like tomatoes, you will love this dish!

Summer can be slow at Casa-Rolls (as our busiest time is during the school year)....however, many of you will vacation over the next few weeks and Casa-Rolls is a GREAT way to plan for your holiday meals! I am planning a beach vacation with my extended family in August, and we are going to take some casseroles so that we don't have to spend extra money and long hours waiting in line for a table when going out to eat with 20+ people (the size of my "Miller" family). Our appetizers are great too for the vacation you might be taking this summer! You can freeze the casseroles to travel in a cooler for long trips of 6 plus hours with no difficulty, or if you have a big enough cooler, you can travel with them fresh with ice packs to keep them at the right temperature.

Retha's Spaghetti is back by popular demand!! Also, this week's special is King Ranch Chicken. This recipe comes from Texas, and is a spicy chicken casserole that is topped with crunchy crushed tortilla chips. If you like spicy & Mexican, you will love this dish! Next week will be our delicious Roasted Veggie Rotini Bake which has roasted vegetables, tossed with Rotini and a tomato cream sauce. Check our web site for other upcoming specials which include Pork Tenderloin for the grill (the best pork tenderloin that you have ever tasted)!!!!

Our new HIXSON store has been so successful in its first month, and we want to THANK YOU ALL for your support as well as your notes of encouragement! We are still adjusting to our new location and trying to get our daily pars as exact as we can. We have had a couple of overproducing days and have LOTS in our freezer right now, so if you are looking for a BARGIN, check out our freezer sales at both Hixson and East Brainerd!

We're OPEN...Dinner is Served!

We passed our Health Inspection this morning with an outstanding98 rating, our sales counter was delivered; then we plugged in our flashing "OPEN" sign and unlocked our doors! We are so excited to be in our new Hixson location and we can't WAIT to welcome you here!

PLEASE bear with us as we still don't have some things in place. We have not totally decorated the front sales area; we don't have an oven to cook hot orders or a tea machine for tea, and our outdoor signs are not up yet. HOWEVER, over the next couple of weeks you will enjoy seeing our transformation as we finish things out.

The parking lot at this location can be a bit tricky, so please drive carefully! I think the best way to enter is at the Papa John's entrance as that will put you directly in the drive thru lane OR parking in our marked spots. The flow of traffic will take some getting used to at first, but after a time or two, it will be "old hat"!

Excitement is in the air at Casa-Rolls as we get ready to open our NEW LOCATION in Hixson! We are located on Hixson Pike across from Highland Plaza in a space that used to house a laundromat. Our bright yellow paint is on the interior wall, our storefront floors are down, our drive-thru window is in place and we are moving in equipment TODAY!!! Lord willing we will open on TUESDAY, MAY 6th at 10 AM and our hours of operation will be M - F 10 AM to 7 PM and Saturday 10 AM to 6 PM. We will NOT have an oven at this location to start with, so HOT orders will NOT be available, though we anticipate having an oven by August just in time for the 2009 school year! Check our locations for the exact address of the new store (3902 Hixson Pike).

While Casa-Rolls has tried to keep our pricing steady, we now need to adjust pricing to be more reflective of the price increases that we have incurred this past year. Casa-Rolls has had a wonderful three months of operating so far. We would like to thank the people of Chattanooga who have supported and encouraged us as we have gotten our "wheels rolling" and worked out the minor problems that always face a new business! We have been receiving very positive feed back, and have been working to make our meals just what you would want to have if you had time to cook it yourself! If you have any suggestions that might be helpful, please take time to either submit them on the web site, or drop by and talk with us in person.

We have been busy preparing for our HOLIDAY MENU, which will debut on Saturday, November 4th. In addition to our best selling meals, we will be adding several vegetable sides, meats, appetizers, fresh vegetables and holiday pies! We want to help make your holiday as stress free as possible, with food that would look and taste just like YOU would have made it! To help you with your holiday menu, we are having a HOLIDAY TASTING on Saturday, November 4th from 11 AM to 6 PM. Come by and sample many of the items that we will be offering like Green Bean Casserole, Corn Pudding, Sweet Potato Soufflé, Potato Casserole, Chicken 'N Dressing, etc., and pick up a holiday order form to pre-order your meals. We want to make sure that we are able to meet the demand at holiday time, and you can help us know how much to prepare by giving us a heads up on the items and dates that you will need meals!

Dear All,

Whew, it has finally happened! We are open, and what a GREAT day it was! It all went pretty smoothly.....The casseroles looked GREAT and tasted even better....the biggest seller was NO surprise, Cheesy Chicken.

We have a really great staff, and every day gets easier. I still can't believe that it has happened. I have posted the news paper article that was in the Chattanooga Times Free Press today. We also will be on TV for a program "this and that" next week!

Again, Greg and I thank you for your support and prayers during this time! We feel loved and supported! Thank you so very much!

Progress Report

The construction is going right along...they painted yesterday (first coats) and will finish that up today. The store is starting to look really good!!

The Foreman on the job told me that we can start installing equipment on the 5th of July, so on the 5th, 6th and 7th that will be taking place. By then, the ONLY thing holding us back will be the refrigeration unit, which is not due to be shipped until the 10th. We are looking into alternate cooling sources so that we can start practicing at least, so I would guess that we will start our training on the 10th or 11th. Hope we will be able to open later that week!!

After a couple of months of delayed construction, we are finally moving on with our build out in the shopping center where we will be located.

We are so pleased with the location. We will be sharing the center with World Gym, and Brewster's Ice Cream, who have both been swamped with business since they first opened.

The great news is that at both of those places, I have received reports that EVERY DAY people are asking when WE will be open!! We have already received press in the newspaper and on radio, and have people calling everyday to ask if we are open.

So, it looks like our open date will be sometime mid June, which is the Lord's good timing!

Beth Engle in Hendersonville, has done a wonderful job helping me with the design, and getting us ready with our uniforms, colors, signs, etc, so that we don't get too disjointed with our look!

Laura Lindsey has done all of our art work that will be used in the building reception area, on brochures, and banners...not everyone can have original art for their business!!!

Nicholai Ronningen is working on our website, and we really expect it will be running by the time we open up!

Greg has been busy with all of the financial stuff! Matthew has been constantly thinking of policies, check lists, and procedures that we can use at Casa-Rolls. I have been busy working on recipes, gathering food prices, hiring help, and all the many other things that have to be done in a general sense.

We are just ready to get this business open. It has been over a year in the making, and we know that we have a great product, a totally NEW CONCEPT in foodservice, and just can't wait to see where God leads in all of this!
